In this day and time, where “afternoon tea parties”, has been replaced with cocktail parties, still at the cost of social debt. During the late 19th century, the expensive demon alcohol was ruled out and being replaced with fruity drinks even including berries.

The following recipe stars white vinegar & sugar, which gives it a mischivious kick the grown up drink so deserves. Once vinegar is sweetend by sugar the sourness is tamed, and suggest a reminision of wine.

How can this racey drink be edgy and refreshing all without  the intoxication and nausea?

THE VIRGIN STRAWBERRY

2 .5 pt strawberries cleaned

1/2 cup white vinegar

1 cup sugar

1 1/2 qts cold club soda

Ice cubes

Pulse strawberries in blender, transfer to a large bowl & stir in vinegar. chill covered for 12 hrs.

Pourin a fine strainer over a large bowl& drain pressing without forcing any pulp through. Discard pulp. Transfer juice to a heavey sauce pan & stir in sugar. Heat & stir until suar is dissolved 5-6 mins. Stir in 1 part syrup to 3 parts club soda. Add ice. Syrup keeps up to one week covered & chilled.
